catching up

I’m just a few days away from this deadline and I still have several things to cross off. I have 10 items to cross off. I’m not sure if that will be a reality by Sunday, but I’ll see what I can do.

#1 I did go to my first and second photography classes this past week, and completed my homework assignment. I have a new hw assignment to be completed this weekend, I’ll post those soon.

#16 Renaming my business doesn’t seem as if it’s going to happen… it seems to pretty much be set as is, until inspiration strikes, and I just don’t want to rush this one.

#20 Make homemade cheese, might happen, in my 30th year. but probably not before I turn 30. still on the list.

# 22 Clean out my drawers and closets. (seriously, I don’t wear half of these clothes any more)  still needs to happen, but with a RAT-mouse living in our house, this one will also have to wait.
# 23 Paint – oh, still needs to happen, & will.
#24 Make progress on my business plan. Also to happen in my 30th year.
#25 Replace my green pitcher. When I find it’s rightful replacement, it surely will have it’s time.
# 26 Get a new, unlined notebook. I did this, but we shall see. I might find another out there that I like better.

In light of these things, and the many other things, I’d like to complete. I think I will start a new list for my 30th year, how much fun would that be? I think a lot, and with more time to complete it! So here it goes, a new list, in my 30s. (this will be updated once this list is compiled!)

This weekend, I will turn 30. I cannot believe I am on the cusp of this landmark-of-a-birthday.

What’s more, is the day before, the mud run, will happen, ready or not.

Last night Jer and I went to see Inception. It was a special occasion because the last time we went to the movies was almost a year ago. We think it is outrageous to pay $10 for a movie a piece, when we could/would/should gladly spend that hard earned buck elsewhere. Last night, though, we cashed in a groupon, $4 movie tickets and went! So, for LESS THAN what you pay for ONE person at the movies, we both had tickets! Somehow, someway, these are the victories that matter when you are gazelle intense after knocking out debt! It does require creativity.

But wait… this post is not about being debt free… although, I should write a post about this because I most certainly am VERY passionate about this topic. If you would like to talk about what the path to debt free looks like, let me know!

Okay… so Inception. We loved it, we talked about it the entire ride home. We speculated on the possiblity of a sequel, and decided that the characters/families/story lines didn’t leave enough up to the imagination for a sequel, but maybe they’ll surprise us. I say, the next one should be called, “conception.” Jer thought that was a ridiculous notion! ha! Although, this defintion of conception, could very well work:

Something conceived in the mind; a concept, plan, design, idea, or thought.

Jer read on wikipedia this morning that the screenplay was written 9 years ago by Christoper Nolan. That is some patience, but also wisdom, because

(Nolan felt) he needed to have more experience with large-scale films, Nolan opted to work on Batman BeginsThe Prestige and The Dark Knight. He spent six months polishing up the script for Inception before Warner Bros. purchased it in February 2009.

So smart of him to wait it out! A rare quality amongst human-beings: patience.

So, still chipping away at the ol list, and now, I’m crossing out #9, See Inception!

So, I’m attempting to stay on top of my list, but it’s getting tougher.

I did do a few of these over the weekend, so I wanted to get those updated.

I do want to make mention that this is only a base list, the things that I am doing outside of this list are still challenging me (like learning google apps today!). But this list, is whittling away.

So, while away on vaycay, we celebrated our 1st anniversary! A delightful time for the both of us!

On our way home, there was conveniently an ikea on 95, so we of course had to stop to see what we could find.

I mean who can pass up a $3 rug? And picked up some frames to display our newly printed wedding photos. Dee.lightful.

And so it is. 2 more checked off from the 30in30 list. #3  celebrate one year of marriage and #29 go to ikea!

I cannot believe it’s been a year, I simply cannot. Time has flown. We’ve learned a lot about each other, mainly what makes us laugh, what makes us distant, how to live and function as a unit.  Time is a crazy thing, how it seems to drag oh so slowly, but when you look back it feels like it flew right on by.

It’s been a sweet first year, we’ve both learned a lot, experienced lots of transition, and we’re excited about what’s to come.

I ordered wedding pictures a few days ago, hoping they will arrive upon our return home from our anniversary trip.

5 months later.

And, I’m still checking stuff off the 30 to 30 list.  #30, print wedding pictures. Check!

I always love finding new recipes. In fact, it’s so fun to me to get cookbooks from the library to broaden my recipe selection.

A few days ago, I made stuffed acorn squash. Unfortunately I don’t have pictures to go with this, and therefore no proof that I actually made it, so I’ll be making 3 more recipes. The recipe though, was delicious.

Today, I made a pasta salad, with a few ingredients I had sitting around, cucumber, basil, pepperoni, olives, and some delicious roasted garlic & parmesan dressing.

It turned out deliciously, and will be a good item to take on our trip tomorrow.

So, this is one of three, pasta salad, catch all, it didn’t have a recipe, but it didn’t need one. It was delicious with a few cracks of fresh pepper.

And so it is, I am 1/3rd complete with #7 on my 30 days to 30 list, make 3 new recipes.

There are a few things that taste better than homemade salsa. (other than cheesecake and caramel machiattos, of course).

The secret here, I believe is in getting the freshest tomatoes you can find, and stocking it full of locally grown produce. It’s like a farmer’s brag bag jar.

As you know, I’m reading Animal Vegetable Miracle and have been so very inspired to grow my own food & live off the land. Since that can’t fully happen yet, because well, let’s face it – I live in an apartment. I’ve decided to shop for locally grown foods as much as possible.

But since August was tomato month, it was very easy to get delicious, juicy, red orbs. So many, that I’ve made 9 jars of salsa so far (& counting).

So, I set out to make salsa with this deliciousness.

I’m pretty sure I could eat it just like this, not blended, one bit. But just as delicious and colorful.

A beautiful thing about this post is that I can check off 2 things from the 30to30 list.

These are now checked off & the benefit of checking these off is that I now have 4 jars of salsa in my fridge. Yum.

a new email address

It’s official. I joined the ranks of having an email address at a domain. I contemplated the many different words that I could put in front of the @ symbol, but just opted for simply me.

So, please do email me at me@kellycain.com. Although it will sit in cyberspace for awhile, until I get it routed to my Apple Mail inbox.

With that, #14, is checked off the 30 to 30 list.

the official launch of utkcru.org

For #15, finish one of the 4 web projects currently in motion. Can be checked off the 30 to 30 list.

utkcru.org officially launched on Sunday night, but it’s been a slow leak of sorts.

The actual website was migrated from utkcru.wordpress.org to this site, now up and running.

It gives the utkcru team a lot of functionality because it’s a wordpress.org site. There is a you tube video in the upper right hand corner that will allow them to feature an announcement for upcoming events or get out timely info.

There is also a lot of cool little details that the utkcru team needed to solve some of their admin issues. One of the things they told me when talking with them was that they needed some type of way to track email addresses for email sign ups. With this website, they can have the student enter it on the page and the email address goes right into Mad Mimi. (she may be mad, but she is sensational!)

a clean desktop & a yard sale.

I’m so proud to say that I have a clean desktop as #12 references:

only 3 icons remain. My HD, it’s not going anywhere, and my automator photo resizer and it’s destination folder. (If these are moved, they refuse to work) A new one needs to be created and put in a more discreet place, but that’s for a different list.

Oh and #13, a yard sale has been scheduled, in true Dave Ramsey-esque form, October 30th, details to follow. Save the date.

With this post, I can check off a few from the 30to30 list.

#5 Launch Half’s fall line at Hallelu – a humongo success! Thanks to everyone who made it out! With this new fall line, you give 50 school meals to a child in need with each product you purchase. That’s HALF a year!

Also, #6,  Be well on the way to debt free:  of which Jer informed me, that we are right on track, we just need to stay the course. We have one, I repeat ONE student loan that stands between us and debt free. Then it’s on to step 3, then 3b (saving for a house!)

#21 Take the high road, proves to be a repeated guest star in my life lately, so I’m sure this will be checked off more than thrice!

#22 Clean out my drawers and closets. – I cleaned out my drawers this weekend, with a pretty big pile of clothes to donate & sell. I still need to go through the ol closet before this one gets completely checked off.
